A foolproof oven method that delivers a perfect roast every single time
This recipe is so easy and tastes so good. The key is to use a 5 lb. beef roast — preferably a sirloin tip, eye of round, or similar lean cut. You don't want a roast with any bone, fat, or gristle. The magic is in the method: a screaming hot oven followed by simply turning it off and walking away. Start it early in the morning and it'll be ready for dinner. No fussing, no basting, no peeking — just a gorgeous, juicy roast every single time.
Preheat the Oven
Preheat your oven to 500°F and allow it to preheat for a full one hour. This step is critical — the oven must be fully up to temperature before the roast goes in.
Prep the Roast
While the oven is preheating, use a sharp knife to cut slits all over the roast. Stuff each slit with a slice of fresh garlic. Then generously sprinkle the entire roast with dried tarragon, garlic powder, and cracked peppercorns.
Roast at 500°F
Place the seasoned roast in a shallow non-metallic baking dish. Put it in the oven uncovered and roast at 500°F for exactly one hour. Do not open the oven door during this time — not even once!
Turn Off the Oven
After one hour, simply turn off the oven. Do not open the door. Leave the roast inside to finish cooking in the residual heat for several hours. It's best to start this early in the morning so it's ready for dinner.
Rest and Slice
After several hours, remove the roast from the oven and place it on a cutting board. Slice diagonally against the grain. The center will be a beautiful medium-rare, while the ends will be medium to well done — something for everyone!
Make the Perfect Au Jus
Pour some water into the baking dish with all those wonderful drippings. Microwave for several minutes to soften the fond, then scrape it off the bottom and strain. You will have a perfect au jus sauce. Serve alongside the roast with a freshly steamed vegetable and fresh sourdough bread for dipping in the au jus. Family and friends will absolutely love this meal!
