Southwest Corn Salad Recipe

INGREDIENTS

 

2 cans Green Giant Steam Crisp corn, drained

1 15 oz. can black or garbanzo beans, rinsed well and drained

1 15 oz. can black olives, chopped

1 red bell pepper, diced

1 orange bell pepper, diced

1 jalapeno pepper, seeded and minced

3 celery stalks, thinly sliced

6 green onions, thinly sliced (including white part)

3 cloves garlic, finely minced

1/2 bunch of cilantro, chopped

1 tsp. ground cumino

2 limes, juiced

1 tbl. roasted garlic red wine vinegar

1/4 cup cider vinegar

2 tsp. sugar

1 tsp. kosher salt

 

DIRECTIONS

In a large mixing bowl, combine all ingredients. Stir well until veggies are coated with spices and herbs.  Cover with plastic wrap and put in refrigerator for an hour or so before serving.
